The West County Wanderer: A variation on the classic Negroni

If you know Patrick well, you know that perhaps his favorite drink of all time is the Negroni.  With the holiday and chilly weather approaching, we thought it would be fun to create some new cocktails using Amaro Bilaro, our newest project, which will be released next year.  Amaro Bilaro is made from organic herbs and botanicals macerated in neutral grape spirit from grapes grown right here in Sonoma County -- we think it's great on its own or mixed in cocktails.  

The West County Wanderer               A variation on the classic Negroni. 

1 ounce barrel-aged gin (we prefer Russell Henry Dark Gin)

1 ounce Amaro Bilaro

1 ounce Aperol

2 dashes Fee Brothers Orange Bitters

Combine ingredients in a mixing glass full of ice, stir well until chilled.  Strain into a chilled coupe glass.  Garnish with orange peel, twisted to release the essential oils, and rub around rim of glass.
